French Onion Soup

A deeply rich, slow-cooked onion broth crowned with toasted baguette and bubbling Gruyère. Worth every minute.

Ingredients

  • 1 kg yellow onions
  • 50 g unsalted butter
  • 2 tbsp olive oil
  • 1 tsp sugar
  • 200 ml dry white wine
  • 1 litre good beef stock
  • 1 tbsp fresh thyme leaves
  • 4 slices baguette
  • 150 g Gruyère

Steps

    Melt butter and oil in a large heavy pot. Add onions and sugar. Cook over low heat, stirring occasionally, for 45–60 minutes until deeply golden.

    Deglaze with white wine, scraping up any brown bits. Cook until almost evaporated.

    Add stock and thyme. Simmer 15 minutes. Season.

    Ladle soup into oven-safe bowls. Top with toasted baguette and a thick layer of Gruyère.

    Grill under a hot broiler until cheese is bubbling and golden. Serve immediately.
