
Beef Tacos with Salsa Roja

Quick weeknight tacos with spiced ground beef, fresh salsa, and all the toppings. On the table in 25 minutes.
Ingredients

- 500 g ground beef
- 8 small corn tortillas
- 1 white onion — half finely diced, half sliced
- 3 cloves garlic — minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 2 tomatoes — roughly chopped
- 1 jalapeño — roughly chopped
- 1 handful fresh coriander
- 1 lime — cut into wedges

Blend tomatoes, jalapeño, half the onion and coriander stems to a rough salsa. Season.

Brown the beef over high heat. Drain excess fat, then add garlic, cumin and paprika. Cook 2 minutes.

Add half the salsa to the beef and simmer until absorbed.

Warm tortillas directly over a gas flame or in a dry pan until charred in spots.

Fill tortillas with beef, top with remaining raw salsa, sliced onion, coriander leaves and a squeeze of lime.
